Bondi is about to get another very good reason to abandon any plans of making breakfast at home.
Baker Bleu is opening at 34 Hall Street, Bondi this December, taking over the former Le Paris Go site near Gertrude & Alice.
The new shop will bring the bakery’s much loved sourdough, pastries, sandwiches and coffee within strolling distance of the beach.
And because this is Bondi, there will be soft serve too.
Bread, coffee, sandwiches and soft serve on Hall Street. This one is going to be busy.

What to expect
The Bondi store will follow a grab and go format rather than operating as another full production bakery.
Bread will be baked at Baker Bleu’s Double Bay bakery, while sandwiches will be made and assembled fresh on site in Bondi.
Expect sourdough, croissants, bagels, Vegemite cheese knots, almond and yuzu croissants, wagyu salt beef sandwiches, ham and Gruyère ficelles, Market Lane coffee, iced drinks and soft serve.
There will also be around 20 outdoor seats for anyone who does not make it very far with the pastry.
Why Bondi?
Baker Bleu already serves seasonal soft serve at its South Yarra store in Melbourne, but not at Double Bay.
For Bondi, it makes perfect sense.
Beach. Summer. Soft serve. Nobody needed a strategy meeting for that one.
The Bondi shop will bring Baker Bleu’s bread, pastries and sandwiches closer to the beach.
A cult bakery with serious Sydney plans
Mike and Mia Russell launched Baker Bleu in Melbourne in 2016 before opening in Double Bay in 2022.
It quickly built a loyal Sydney following for its dark crust sourdough, naturally leavened pastries and seriously good sandwiches.
Bondi will not be the end of the expansion either, with more Sydney locations planned for 2027.
