I had the pleasure of dining there myself and from the moment I stepped inside, I was completely won over by the hospitality, the ambience and, of course, the food.
The space is quaint, warm, friendly and atmospheric. It feels personal in the best possible way — the kind of restaurant where you settle in, trust the recommendations and let the evening unfold.
I had no idea what to expect from Dalmatian cuisine, but with a few friendly suggestions from owner and chef Vedran Perojevic, I was hooked.

Born in Dubrovnik, Vedran has created a restaurant that celebrates the food of Croatia’s Dalmatian coast — a region known for Adriatic seafood, slow-cooked meats, traditional pasta dishes, beautiful olive oil and generous hospitality.
The menu brings together traditional recipes and a more modern, refined approach, while still staying grounded in simplicity and authenticity.
Seafood is prepared à la minute. Sauces are slow-cooked. Bread is baked in-house every day. The food takes time — and that is very much the point.

One detail we loved? The bread.
St Blaise bakes its bread in-house every day and serves it generously alongside the meal, as part of the experience rather than an add-on.
The wine list is small, considered and entirely sourced from outside Australia, featuring bottles from Italy, France, Spain, Austria, Germany, South Africa, Chile and Argentina.
Guests can also explore an extensive range of traditional Croatian liqueurs including fig, cherry, honey, carob and chokeberry, alongside artisan rakija, grappa, plum and quince brandies.
It is the kind of drinks experience that makes the whole meal feel like a little European escape.
